Beet Greens

Wash well, leave 'beetlets' attached (remove some of the long, skinny root end) and blanche in simmering water till slightly tender.  

Drain.

Cut the greens into smaller lengths and coarsely chop the beetlets.

Place in a small baking dish and sprinkle lightly with white balsamic
vinegar (Laura used champagne vinegar).

Toss.  

Dot with goat cheese and bake at 350 for about 15 - 20 min., till cheese melts.
